“Tex-Mex Taco Pasta” is What’s for Dinner

Do you ever have one of those days where you are heading home from work, go to pick your kids up from school, and BAM a wicked headache hits??? Well I had one of those days today.  As I am driving home from the girls school all I am thinking about what we are having for dinner and how I really do not feel like cooking.  What I really want to do is lie down and make everything stop. What happened next was pretty amazing, my daughter said “mommy can I help you cook dinner tonight?”.  This was what I needed to hear, so my sous chef grabbed a chair and took direction like a champ.

On to the dinner, we had Tex-Mex Taco Pasta. I found the recipe while perusing Pinterest.  There were several key things that stood out to my on this recipe, it has minimal ingredients and I could make easy substitutions.  I used ground turkey as the meat.  I like to stay away from packages spices, they tend to add extra “stuff” that is not necessary. I like Frontier Mexican Fiesta blend from Whole Foods. Instead of Rotel I used an organic mexican diced tomato blend and the last substitution that was made is we DID NOT include the cilantro. We are part of the “herby soap” tasting population when it comes to cilantro. With respect to the other ingredients we used organic items.

By the time dinner was done, my head was feeling better and boy was I lucky because this was a very tasty meal. I loved the creamy sauce that was made with the heavy cream and the cheese. This would make a great base for a lot of different items {nachos with meat queso sauce anyone}. There was enough left that it will be tomorrow’s dinner. I am looking forward to that because as everyone know, any meal with pasta is SO MUCH BETTER the next day! This meal earned a four thumbs up, which makes it a winner at our house.
